    I figured the KFC stuff was a bad imitation. Maybe if I'm ever over that way, I'll try some. I'm not a big fan of really hot stuff but I like chicken and a reasonable amount of spicyness.

    We had a Gusses? chicken for a few months. Think that's a Memphis thing. Spiced chicken but it wasn't all that good and went out of business quickly.

    There is damn good real hot chicken all over Nashville. Love it.

    Best way to eat chicken.


    That said I live in Alabama and got desperate last week and got KFC Hot Chicken. It was nasty. It made me nauseous.


    Now I will say this, Jim and Nicks BBQ sells Nashville Hot Chicken now and it is the closest thing to authentic I've had outside of Tennessee.

    I've actually gotten it a couple times.

    Best I can do in Alabama.

    Hot chicken tastes like it was dipped in, immersed in hot sauce before it is breaded. Some places pan fry the chicken so it has a crispiness to it. Some apply more sauce after frying. It is a bit messy which is why it is usually served on top of bread.

    Popeyes marinate their chicken in hot sauce so there is some similarity there and applying hot sauce just before eating is buffalo style in my mind. Just like buffalo wings.

    Well it's a fact Jack.

    The spice comes from the paste. At least that's how the places like Hattie B's and Prince's (which is what I consider to be ORIGINAL Nashville Hot Chicken) do it. It can certainly be dipped in hot sauce before hand, everyone is going to have a slightly different recipe, but trust me.... that trademark "hot" flavor is from the paste. We make it all the time in our house.

    Years ago there was a place at 51st and Centennial called Pee Wee's. Very hot chicken, it took a time or two to get accustomed to it. Pee Wee probably sold a lot more beer because the chicken was so hot. Anyone remember Pee Wee's?

    It's my favorite but, as my stomach grows older, can only go to the first level of heat with my chicken or fish without suffering for the next 24 hours.

    I'm a fan of their shrimp burgers. Not hot but deeeeeeelish.

    I tried the hottest level at Hattie B's once. Stomach was messed up for like 3 days straight. I do love the 2nd hottest though. The pickles are a must when eating hot chicken.
