I think I've finally sorted out my issues with low and slow cooking. Before I wasn't keeping the meat moist and wasn't pulling apart like it should.
Last week I did a 9.5 hour pulled pork
And the weekend just past I did 4 hour Pork Ribs
Looks good to me
I've been thinking about converting a filing cabinet into smoker
Anyone done that before ?
Not sure that would hold the heat well enough
