I'm curious as to why anyone would want to do this.

If it's your own tracks in a sequencer, it will bounce the whole MIDI arrangement or specified parts to mp3 and other file types...wavs, aiff, ogg, etc.

If it's a basic GM file, who would want to listen to it? They sound like a child's keyboard demo.

A friend of mine needs me to convert her MIDI recording that was down on a electric piano to MP3 so the CD player at the Talent show will read the CD.
She needs it by Friday...and I just got it tonight

General Midi. A non-proprietary MIDI decoder that translates everything as one set of basic sounds.

When you listen to a MIDI file on your computer, it's being played by GM. All the other types are used by pros to communicate only with specific manufacturer's instruments.

Hard to explain here, but that's the gist of it.
