    It started out as being based around Jazz. Now it's opened up to pretty much anything.

    I don't know how you can say that about a entire state. Certainly New Orleans is not the self reliance capital of the nation but most of Louisiana is like anywhere else in the south but with better food. I consider the cajuns a very hard working and hearty lot.

    It's funny that in the early history of New Orleans they had to pay Germans to come to the area by giving them free land just so they could have some people who could grow and produce something.

    While the cajuns adjusted to their enviroment by eating whatevever was available the people in New Orleans never made those types of adjustments preferring for example to spend enormous prices for imported flour for their bread rather than just learning to like cornbread since corn grew all over the place. Cajuns learned to love cornbread as well as any creature that swam, flew or ran in their path.
