Yeah it stays on the stand and never even touches the grates. The chicken cooks on low, indirect heat for 4 or 5 hours.. Under the grates is a foil pan with water in it to catch the drippings..

The grates in the pic are older stainless grates.

You can buy things made to do this same thing. You should watch cooking painted aluminum. The heat can vaporize the paint and the vapors get baked into the chicken. It is not going to kill you if you do it a on occasion but continued exposure is not a good thing.

Have yall tried Cheese Stuffed Burgers?

When you go to make your patties just make 2 1/4 think portions (like cutting the burgers in half) you can use cheese, blue cheese, mushrooms, pre cooked bacon or chili peppers as the stuffing.

Once you have the stuffing ready, place it in the center of one patty. Spread it out, leaving plenty of room all around the edges. Place the second patty on top and press the edges together. Make sure that you have a good solid patty that isn't more than an inch thick, and dont over stuff it could make your burger fall apart when cooked.

Just follow the same basic method for grilling a hamburger. they are really good and a favorite when you have a get together for a cook out.
